I have been obsessed with this lately. This time of year is about the only time I like pumpkin-inspired food. I don't know what it is about the fall that makes your taste buds all of the sudden crave things like pumpkin and peppermint mocha!! Anyway, I came across this on Half-Baked Harvest I had to make it. I have been making it for several days now!
Makes 2 lattes
Ingredients
1 1/2 cups whole milk 1/4 cup canned pumpkin puree 1/2 cup old-fashioned oats 1 1/2 teaspoons pumpkin pie spice, plus more for topping 1/4 teaspoon kosher salt 2 teaspoons vanilla extract 1/2 cup hot black coffee or espresso granola and whipped cream, for topping
Instructions
1. Combine the milk, pumpkin, oats, pumpkin pie spice, vanilla, and salt in a medium pot and bring to a simmer, heating the mixture until it is steaming. When the mixture is steaming hot, remove it from the heat. Using a small whisk or a fork, whisk until frothy.
2. Divide the milk mixture between 2 mugs and pour the coffee over each. Top with whipped cream and granola. Sip and use a spoon to best consume this!
